Slow-Roast Sunday Lamb

A shoulder of lamb, a hot oven turned low, and five hours of patience.

This is our default Sunday roast when the weather turns. It is almost entirely hands-off.

Ingredients

  • 1 shoulder of lamb (~2kg)
  • 6 cloves garlic
  • Rosemary, salt, pepper, olive oil

Method

  1. Sear, season, and cover.
  2. Roast at 150C for ~5 hours until it pulls apart.
  3. Rest, then shred.
